This delicious gluten-free banana cake is also dairy-free. Virtasalmen Viljatuote' coarse flour mix gives the cake a new look, but if you want a more traditional cake, use a light flour mix.

150 g dairy-free margarine
2,5 dl sugar
2 eggs
4,5 dl Virtasalmi's Grain Product Light or Brown Gluten Free Flour Puree
2tspbaking powder
1tspbaking soda
1tspsalt
1 tsp ginger (or cinnamon)
1 tsp cloves (or cardamom)
2 tsp cinnamon
3 banana
Preparation
- Whisk together the sugar and margarine.
- Add the eggs, mixing well.
- Add the mixed dry ingredients alternately with the mashed banana.
- Bake in a floured cake tin
- in a 170 °C oven for 50-60 minutes.
- Gluten-free banana cake is at its best when slightly chilled.

2dl baking powder???? Quite a lot!?
And, teaspoon, in Finnish tsp is = tsk in Swedish.
På svenska heter det mjölmix inte pure'! ('pure' = puree in Finnish) or do you have a puree and flour product?

Our Swedish website is still under construction, so there are several errors in the recipes. We are working on correcting them! Baking powder for this cake is 2 tsp. Sorry for these errors!
The amount of flour seemed too much; the cake turned out a little hard and dry. Is the correct amount 3.5–4 dl?

The consistency of the batter is greatly affected by how you measure the flour, as well as the size of the bananas and eggs. It’s worth trying to reduce the amount of flour to, for example, 3.75 dl – 4 dl. The batter should be thick, but still easy to spread into the pan with a spatula. If the batter is very stiff or almost pliable, there’s too much flour. It’s a good idea to check the cake after 45 minutes; a toothpick should come out with a few moist crumbs.😊
