Gluten free Buckwheat porridge
Recipe by Virtasalmen Viljatuote Oy
This lovely treat is low in calories and healthy, but still sweet. You can vary the freshness and tartness by adding berries. Gluten-free buckwheat porridge is high in fibre, magnesium, zinc and vitamin B1. Figs are alkaline and therefore good for the body's PH balance.
Ingredients
2 dl overnight soaked Virtasalmi Cereal Product Gluten Free Buckwheat Raisins
5 (organic) figs soaked overnight
0,5 tsp ceylon cinnamon
2 dl soaking water
(1 banana)
a pinch of salt
Preparation
- Soak the buckwheat and figs separately. In the morning, rinse the buckwheat under running water. Soaked buckwheat is quite slimy, but don't let that bother you ;).
- Pour all the ingredients into a blender and blend until smooth. Add more water if needed, but not a lot, just enough to keep the blender running.
- If you want it really sweet, add a banana.
- Put a generous amount of raspberries and buckwheat and fig porridge in a bowl. You can also layer them together for a wonderful dessert.
- Gluten-free buckwheat porridge is also likely to appeal to children.
