The delicious gluten-free Pastel de Nata pastries are made from Virtasalmen Viljatuote' bun flour mix.

- Dough
100 g butter
100gquark
0,75tspbaking powder
- Stuffing
2 dl whipping cream
1 dl red milk
0,5 dl brown sugar
1 tsp lemon flavouring (or lemon zest)
2 tsp vanilla sugar
0,25 tsp cinnamon
3 egg yolk
powdered sugar for decoration
Preparation
- Dough
- Mix the soft butter and the quark.
- Mix the dry ingredients together and pluck into the mixture.
- Stuffing
- Boil the cream, milk and spices in a water bath for about 10 minutes (in a water bath the milk will not burn to the bottom).
- Beat the egg yolks and sugar until light and fluffy.
- Let the cream mixture cool and stir in the foam.
- Roll out the butter dough and use a drinking glass to make round blanks.
- Grease the muffin tin and place the batter in the wells.
- The batter makes about 12 muffin cases.
- Poke holes in the bottom with a fork and spoon 3 tablespoons of filling into each muffin.
- Bake the pastries in a 200°C oven for 15 minutes until nicely browned.
- You can decorate the cooled gluten-free Pastel de Nata with icing sugar.
