Gluten-free Lucia buns

The smell of freshly baked Lucia buns is hard to beat. With this recipe, they are gluten-free, airy and golden brown, just the way classic Lucia buns should be.

Ingredients

  • 50 g yeast (for sweet dough)

  • 160 g butter

  • 5 dl milk

  • 1 g saffron

  • 2,5 dl sugar

  • 1 riposte salt

  • n. 10 dl Grain product Light Flour Puree or Bun Flour Puree

  • 1 pcs egg for lubrication

  • raisins for decoration

Preparation

  • Melt the butter and pour in the milk. Heat to 37 degrees.
  • Crumble the yeast into a bowl and dissolve it in a small amount of liquid.
  • Add the rest of the liquid, saffron, sugar and salt.
  • Stir in the flour mixture a little at a time until the dough is smooth but still slightly sticky.
  • Let rise under a cloth for 30 minutes.
  • Shape the bars, roll them into S-shaped buns, place them on a baking sheet and let them rise for another 30 minutes.
  • Brush the buns with egg, press the raisins into the buns and bake at 225 degrees for 6-8 minutes.
  • Allow to cool under a baking sheet to keep the buns soft and juicy for longer.
