The smell of freshly baked Lucia buns is hard to beat. With this recipe, they are gluten-free, airy and golden brown, just the way classic Lucia buns should be.
Ingredients
50 g yeast (for sweet dough)
160 g butter
5 dl milk
1 g saffron
2,5 dl sugar
1 riposte salt
n. 10 dl Grain product Light Flour Puree or Bun Flour Puree
1 pcs egg for lubrication
raisins for decoration
Preparation
- Melt the butter and pour in the milk. Heat to 37 degrees.
- Crumble the yeast into a bowl and dissolve it in a small amount of liquid.
- Add the rest of the liquid, saffron, sugar and salt.
- Stir in the flour mixture a little at a time until the dough is smooth but still slightly sticky.
- Let rise under a cloth for 30 minutes.
- Shape the bars, roll them into S-shaped buns, place them on a baking sheet and let them rise for another 30 minutes.
- Brush the buns with egg, press the raisins into the buns and bake at 225 degrees for 6-8 minutes.
- Allow to cool under a baking sheet to keep the buns soft and juicy for longer.
