Gluten-free waffles are delicious with ice cream and berries. Try different savoury toppings too.
Ingredients
2 eggs
3 dl water
1 tsp baking powder
n. 2,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
0,5 tl salt
50 g butter, melted
2 dl vichy
- Oat wafers
Replace Light flour mix
Preparation
- Break the eggs into a bowl and whisk to break up the texture.
- Add water. Mix the baking powder into the flour mix and whisk into the water-egg mixture.
- Add salt and melted butter.
- There is no need to puff the dough, as the flour mix contains psyllium.
- Add the vichy before frying.
- Use a waffle iron to bake waffles from the dough and serve the gluten-free waffles warm, for example with ice cream and berries or jam.
- The same basic waffle is also suitable for savoury fillings.

The recipe is about the amount of flour, as the flour measuring technique is often different for different bakers, the water absorption capacity of flour can vary from crop to crop and the psyllium in the flour mixture can also work in different ways. It is worth puffing the dough for a while to see if more flour is needed.
