Gluten-free spinach fritters

Savoury gluten-free spinach pancakes are a delicious lunch or dinner! Try the mushroom sauce with the pancakes or fill to your taste!
Ingredients
- Fox fritters
2,75 dl milk
1 egg
1tspsalt
60-70 g spinach
- Stuffing
1 tlk sour cream
1 tlk cottage cheese
1 small red onion
salt
thyme
rosemary
black pepper
mushrooms (200-400g depending on how much stuffing you want)
spinach (60-80g)
same spices
Preparation
- Using a blender or hand blender, blend the milk, egg and spinach into a fine green liquid. Add the flour and salt and blend until smooth. Allow to swell for about 10 minutes. Fry the pancakes with oil. Stir the dough before taking another batch.
- Chop the onion into small pieces. Mix the cream, pearl sugar, spices and onion together. Taste and season to your taste! Chop the mushrooms and fry in a pan. When the mushrooms are almost done, add the spinach to the pan. Season using the same spices as in the stuffing.
- Between the braid, add the cream and cream cheese filling and the mushroom gratin. Enjoy the gluten-free spinach pancakes even at dinner!
