minutesGluten-free pesto rolls are delicious on their own or even with soup! Pesto and cheese wrapped in bread dough is a heavenly combination.
Ingredients
- Dough
5 dl water
1 pss dry yeast
1tspsalt
0,5 dl oil
n. 5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
- Between
1 jar green pesto (180-190 g)
100-150 g grated cheese (mozzarella)
Preparation
- Mix the yeast into the flour and add the rest of the ingredients. Knead well with a machine or by hand. Allow to swell in a bowl for about 5 minutes. The dough should be really soft and fluffy, but after puffing, you can add more flour if necessary.
- Turn the dough out onto a well-floured board. Divide it in half and set the other half aside. Using a generous amount of flour, roll out the dough into a rectangular disk about a centimeter thick. Spread half a jar of pesto evenly around the edges of the dough. Sprinkle half of the grated cheese on top. Roll loosely and divide into pieces about two fingers thick.
- Place the rolls, cut side up, in the wells of a greased muffin tin or greased baking pan. Rise for about 30 minutes and bake at 220°C for 20-25 minutes. The pesto rolls bake faster in a muffin pan than in a baking dish.
- Warm the gluten-free pesto rolls before eating and freeze them fresh.
