minutesThese gluten-free Panda muffins are the brainchild of Lumi and Pyry, two pandas who moved to Ähtäri. The muffins have a wonderfully chocolatey batter and the appearance is sure to delight everyone. The decorations are easily made from black sugar paste or Kick bars.
Gluten-free panda muffins are easily made from Virtasalmen Viljatuote's Bun Flour Mix. Try it and love it too!
Ingredients
125 g butter
1 dl milk
2 eggs
2 dl sugar
2 tsp vanilla sugar
2tspbaking powder
150 g dark gluten-free chocolate
- Frosting
2 dl cream
0,5 prk French cream
100 g vanilla cream cheese
n. 2 tsp sugar
Black sugar paste or Kick-bar for ears, eyes and muzzle
Preparation
- Chop the chocolate and put it in a water bath to melt. Melt the butter in a saucepan (do not bring to the boil), add the milk, sugar and vanilla sugar, stir and add the eggs. Mix the baking powder into the cereal bun powder mixture and add the flour mix to the dough, mix and let the dough swell for a few minutes. Fold the dough in half and mix the other half of the dough with the melted chocolate (check that the chocolate is not scorching hot). Transfer the batter to piping bags and pipe or spoon both batter side by side into muffin tins/muffin liners so that the tins are half filled with the light and half filled with the dark batter. Bake at 225°C for about 12-16 minutes, depending on the size of the muffins.
- You can also bake the dough as a cake in a baking pan lined with baking paper (approx. 20×40 cm).In this case, spoon the two doughs alternately into the baking pan and bake at 200°C for approx. 17-20 min. When the cake base has cooled, cut the base into square pastry shapes.
- Prepare the frosting by whipping the cream first, then mix the cream cheese and cream cheese together and whip for a moment. Carefully mix the whipped cream in a couple of batches with the cream cheese and cream cheese frosting and add sugar to taste. Use a rounded pastry bag to press the muffins or pastry cases into balls and decorate them with ears, eyes and a shape made of sugar paste or softened Kick bar. The pandas are ready to enjoy.
