Gluten-free blueberry butter biscuits

These gluten-free blueberry buttermilk biscuits are deliciously crunchy and blueberry-y - like blueberry pie, but in a handy biscuit form. Enjoy as a snack or as a healthier treat with coffee!
Ingredients
2 dl Virtasalmi's Gluten-Free Cereal Product Gluten-Free Mashed Beans and Beans
1 dl Gluten-free oat flakes from Virtasalmi's Cereal Product
0,5 dl sunflower seeds (you can use any seeds or chopped nuts)
0,75 dl coconut sugar (you can also use regular sugar or brown sugar)
1 tsp ground cardamom
0,5 tl salt
90 g (approx. 1 dl) of oil (e.g. coconut oil with a neutral flavour)
0,75 dl soya yoghurt
50 g (approx. 1 dl) frozen blackberries
Preparation
- Preheat the oven to 200°C.
- Mix the dry ingredients: flour, flakes, seeds, sugar and spices. Add the oil and mix well. At this stage the dough should be coarse. Pour in the yoghurt and blueberries and knead the dough until soft and firm.
- Shape the dough into biscuits and bake for 10 minutes. Let the biscuits cool well. Store the gluten-free blueberry butter biscuits in a tightly sealed box if you don't have time to eat them all at once.
- You can also roll the dough into a disk and bake the disk for 10 minutes. Cut the disc into bars and let cool.
