Gluten-free blueberry muffins

Gluten-free blueberry muffins are a quick and easy treat. The batter makes about 9 muffins. You can also try icing the muffins and making cupcakes. You can use whipped cream for the icing, for example. Try the recipe with other berries such as strawberries or raspberries.

1 egg
1 dl sugar
100 g margarine or butter
1 tl vanilla sugar
1,5 tsp baking powder
0,5 dl milk
2 dl blueberries
Preparation
- Mix the egg, sugar and melted margarine/butter.
- Mix together the oat flour mix, vanilla sugar and baking powder.
- Add the dry ingredients alternately with the milk and mix until smooth.
- Finally, add the blueberries, stirring gently.
- Divide the dough into muffin tins (remember to leave room to rise!)
- Bake the gluten-free blueberry muffins at 200°C for 10-15 minutes.

Thank you for your feedback! This recipe can be used to make both pies and muffins. Depending on the size of the pie pan and the desired thickness of the pie, you can make e.g. double the amount of dough.
