Gluten-free doughnuts are a must-have for the spring celebration of the Easter holidays. Try our easy recipe and you'll love it too.
Ingredients
5 dl milk
50 g yeast
2 eggs
1,5 dl sugar
2 tl cardamom seeds
1tspsalt
0,5tspvanilla sugar
100 g butter
(1 tl psyllium can be added to the flour)
Oil for frying
sugar for icing
Preparation
- Heat the milk to lukewarm and dissolve the yeast in it.
- Mix in the eggs, salt, sugar, spices and some of the flour.
- Continue mixing and add the soft butter and the rest of the flour.
- Preferably use a mixer to mix the dough, or carefully prepare the dough by hand. Machine-made dough requires less flour than hand-made dough.
- Tip the dough onto the baking tray and let it rest for about 5 minutes.
- Make two bars of dough and divide them into small pieces.
- Roll the pieces into small balls and place on a baking tray on a baking paper.
- Rise the buns, covered with a baking sheet, for about 30 minutes in an oven with a boiling hot kettle on the bottom. Leave a space between the baking tray and the kettle to allow the warm air to circulate well. Two baking sheets can be placed in the oven at a time to rise.
- Press a hole in the middle of the raised buns with your thumb and shape with your fingers to form a ringlet.
- Heat the oil in a pot or saucepan to 170-180 degrees.
- Fry the donut rings a few at a time, turning them over occasionally until nicely browned.
- Drain the fat on kitchen paper and sugar the doughnuts.
- Gluten-free doughnuts are at their best when fresh
I do a lot of baking "from scratch", it's good from the feel of it.
I made this one just like the recipe on a food processor. I had to use 11 dl of flour though, even then the dough was quite loose and tricky to bake. Good doughnuts in the end!

Thank you for your feedback. Sometimes the dough may require more flour. Glad you dared to add more and the main thing is that the end result tasted good.
Hi I baked a double batch of doughnuts according to the instructions on the side of the bun and flour box,I measured the ingredients carefully , mixed with an electric mixer ( not with dough hooks ). The dough turned out really good, easy to bake and didn't stick to my hands.
Such a good flour mix that I will definitely order a bigger bag next time.

Yes, you can. Unlike the bun flour mix, the light flour mix contains buckwheat, which is the main difference between the flours. 🙂

The May Day edible or melt-in-your-mouth doughnuts turned out well. I'm sure anyone can make cereal bun flour, as I was in that group messing around. I've made ear rolls with good success and the Virtasalmi bun flours are the best,you can add the binder to them.
