minutesGluten-free biscuit ice cream is the perfect summer treat. A brownie-style biscuit and your favourite ice cream - the perfect combo!
Ingredients
2 eggs
2 dl brown sugar
1 dl coconut sugar (or regular)
1 tl vanilla sugar
150 g margarine
200 g dark chocolate (gluten-free!)
3 tbsp cocoa powder
1 tsp baking powder
0,5 tl salt
Preparation
- Melt the margarine and chocolate in a microwave until melted. Using an electric mixer, beat the sugars and eggs until well combined. For about 5 minutes. Add the margarine-chocolate mixture to the egg-sugar foam and mix. Combine the dry ingredients and add to the mixture. Stir until the flour is well mixed into the batter. Put the dough in the fridge for 10 minutes.
- You will need two baking sheets. Make 12 dough balls on each baking sheet using spoons. Bake in a 175°C oven for about 12 minutes. Allow to cool thoroughly.
- Cut a slice of your favourite ice cream and place it between the two biscuits. Serve immediately.
