minutesGluten-free Christmas cakes are a must for the traditional Christmas table. You can also use applesauce, for example, instead of the plum puree.
Ingredients
1tlk(250 g) quark
250 g butter
3,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
1 tsp baking powder

100 g Butter in thin shavings between the dough
Preparation
- Mix the soft butter and quark until smooth.
- Add the baking powder and flour mix to the mixture and mix quickly until smooth.
- Place the dough in a rectangular piece of cling film and leave to harden in the fridge before baking.
- Roll out the dough into a disk and make different kinds of star-shaped cakes or Christmas cakes folded into a pastry shape.
- Brush with egg and bake at 200°C for 10-13 minutes. Let cool for a while and the gluten-free Christmas cakes are ready to enjoy.

- You can also add butter to the dough if you want a result similar to puff pastry.
- Roll out the refrigerated tart dough on a floured board into a 20×30 cm disk.
- Roll out the butter on a cheese board into thin slices and spread on a baking tray.
- Then fold the dough into three pieces, with the long sides in the middle. Remove the flour from the rollable surfaces.
- Turn the dough horizontally and roll out again into a 20×30 cm disk. Repeat three more times.
- Put the dough in cling film and leave to harden in the fridge. Bake into tarts.
Tip
- Cake dough also makes a good base dough for pies.

Is baking powder suitable for replacing white flour in Christmas cakes?
Yes, you can. Our bun flour mix is a good all-purpose flour in addition to our light flour mix. The only difference between the two is that there is no cornflour or buckwheat in the bun mix.
