Gluten-free sorghum pancakes taste and feel the same as wheat ones. Try it for yourself and love it! This recipe makes about 5 large pancakes.

Preparation

  • Lightly beat the egg and sugars. Add the milk, melted butter and mix. Whisk in the flour mix. Allow to rest for about 15 minutes, stirring before baking each batch. The pan should be hot so that the pancakes become lacy. Fry on both sides and serve the gluten-free sorghum pancakes warm.

Tip

  • For a savoury snack, leave out the sugars.
  • Since gluten-free flour sinks to the bottom with water/milk alone, you can get a smooth lettuce dough by replacing some of the liquid with yoghurt/cream, for example in the following ratio:

    3 dl water/milk
    2dl unflavoured yoghurt or cream

    The yoghurt/cream binds the flour and prevents the lettuce dough from separating. In this case you can add a little sugar to balance the acidity of the yoghurt/cream and you can adjust the thickness by adding liquid if necessary. Even if the batter seems thick, it spreads well in the pan and the batter does not separate while the previous braids are cooking in the pan. 🙂 - Halla Onerva

  1. Hello and thank you for the information about the new sorghum flour. I wonder what the keto period is on the packages, there are still some of the old packages left. Is there a general guide on how to replace wheat flour with these in recipes?

      The date on the sorghum flour mixes currently in stock is 6.4.2024 🙂 So feel free to order some of the new products to try out.

  2. It makes really good pancakes! You can't tell the difference. We are still on an egg free diet so I replace the eggs with 2dl turkey yogurt. Works great! Remember to fry slightly smaller pancakes.

  3. Oh yum,I left out the vanilla,added a little salt,these pancakes were eaten in two buns in 10 minutes,best batter I ever had,I baked them in six mini pans and left them thin,worked with both jam and bacon🤩
