Cute gluten-free cupcakes made from Virtasalmen Viljatuote' light, gluten-free flour mix. One serving makes 7-8 cups.

Ingredients

  • Basic guide
  • 75 g (dairy-free) margarine

  • 1 dl sugar

  • 1 egg

  • 2 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix

  • 1 tsp baking powder

  • (0,5 ml salt)

  • 1 dl water

  • Pineapple
  • replace the water with 1 dl pineapple juice, add 0,5 pk pineapple crush to the dough.

  • Try the pineapple muffins also as a juicy dry cake.

  • Baking then in a small oven for about 35 minutes.

  • Appeslini chocolate
  • replace the water with 1 dsp orange juice and add 2 tbsp cocoa powder and 2-3 tbsp orange marmalade to the dough

  • (check the suitability of the ingredients).

  • Mocha
  • replace the water with 1 dl of coffee and add 1 tsp of ground cardamom to the dough.

  • Icing (for one serving)
  • 75 g (dairy-free) margarine

  • 1 dl icing sugar

  • 1 yolk

  • 2 tsp vanilla sugar

  • caramel colour

Preparation

  • Basic guide
  • Whisk together the soft fat and sugar.
  • Add the egg and mix well.
  • Mix the dry ingredients together and add to the dough with the liquid.
  • Divide the batter into muffin tins and bake in a 200°C oven for about 20 minutes.
  • Frosting
  • Measure the ingredients into a bowl and whisk until fluffy.
  • Spread the mousse over the cooled muffins.Decorate the gluten-free cupcakes with decorations to suit the diners.
