Gluten Free Carrot Cake

Ingredients

  • 200 g soft butter

  • 2 dl Indian sugar or farina sugar

  • 2 tsp vanilla sugar

  • 3 large room temperature egg

  • 3 dl Viljatuote Coarse Gluten Free Flour Mix

  • 1 dl almond flour

  • 1 tsp baking powder

  • 1tspbaking soda

  • 2 tsp cinnamon

  • 1tspginger

  • 200 g carrot paste

  • Frosting
  • 200 g Valio vanilla-flavoured cream cheese

  • 25 g soft butter

  • 0,75 dl icing sugar

Preparation

  • Preheat the oven to 185°C.
  • Beat the soft butter, sugar and vanilla sugar for a few minutes.
  • Add the eggs one by one and beat vigorously for a couple of minutes.
  • Mix together the flour mix, almond flour, baking powder, baking soda, cinnamon and ginger and add to the mixture.
  • Finally, add the carrot grits and mix the dough until smooth.
  • Grease and flour a 23cm round pan and pour the dough into the pan.
  • Bake the cake in a 180 degree oven for 30-45 minutes.
  • Allow the cake to cool to room temperature before frosting
  • Frosting
  • Mix the ingredients together, spread with a spatula on top of the cake.
  • You can decorate it with almond or nut crumbs, for example.

  1. Hello. I'd like to try. Is it possible with Virtasalmi Durra flour or a light white/dark flour mixture?

      Yes you can 🥰 Our flour mixes are designed to be substituted in almost all recipes in the same proportions. I'd try your options for this, Light Flour Blend or Durra Flour Blend - or why not a little of both!
