Gluten Free Carrot Cake

Gluten-free sorghum flour mix makes a tasty and juicy carrot cake. The look and taste of the cake is finished with a cream cheese and tomato sugar icing.

Ingredients

  • 3 pcs eggs

  • 3 dl sugar

  • 2,5 dl Cereal product Gluten Free Durra Flour Blend

  • 2tspbaking powder

  • 2 tsp vanilla sugar

  • 3 tsp cinnamon

  • 4 dl carrot sauce

  • 150 g butter or margarine

  • Frosting
  • 50 g butter or margarine

  • 100 g unflavoured cream cheese

  • 1,5 dl icing sugar

Preparation

  • Peel and grate the carrots. Whisk the egg and sugar. Combine the dry ingredients and add to the foam with the melted butter and carrot sauce. Allow the dough to swell while you prepare the casserole. Grease the pie dish or use a loose-bottomed pan by stretching baking paper over the bottom and greasing the sides. Diameter approx. 24-26 cm.
  • Bake at 200 degrees for 20-30 min. Allow to cool for a while and prepare the icing.
  • Combine the soft fat, cream cheese and powdered sugar. Mix until smooth. Spread over the carrot cake and decorate as you wish.
