Ingredients
7 dl milk or water
3 eggs
4 dl Virtasalmi's Grain Product Light Gluten Free Flour Puree
1 dl sugar
1 tl vanilla sugar
1tspsalt
100 g butter
Preparation
- Preheat the oven to 225 degrees.
- Melt the butter.
- Mix all the ingredients in a bowl and pour onto a baking sheet and bake for about half an hour.
- Gluten-free pancakes can be served as a dessert or snack with coffee or tea. The pancake can be topped with whipped cream, raspberry jam, whole raspberries, strawberries, blueberries. The most modern toppings are chocolate sauce or syrup.
How about making the pancake also egg-free and dairy-free? Preferably with a versatile pancake mix. t RM
Hi Roosa! One option would be to try a product called No egg as an egg replacer and use oat milk as milk. However, unfortunately we do not have a recipe for these modifications yet.

By modifying this recipe, I always go vegan and it turns out really good! I use No Egg flour instead of eggs, dairy-free margarine instead of butter and a variety of soy, oat, almond, coconut and rice drinks for the liquid.

A great recipe. In the past I've never been able to make a gluten-free pancake, but this time the result was really good.
Personally, I replace the egg with a banana, so one blackened (the blacker the better) banana per egg. Instead of milk, you can use whatever you use instead.

No baking powder for this... Can the flour in the pancake recipe be changed to just 1:1 gluten-free? Does the baking powder change the texture?

We have not found that baking powder has any effect on the deliciousness of this recipe! However, if you wish, you can add a teaspoon of baking powder, for example. When substituting wheat flour, we always recommend adding a little less of our gluten-free flour mix. For example, replace 3 dl of wheat flour with 2½ dl of gluten-free flour mix and add more flour mix if necessary. Our gluten-free flour mixes are slightly more sufficient because they swell more than wheat flour.
Can pancake mix be used to make pancakes?
