minutesThis delicious gluten-free blueberry coffee cake is made from Virtasalmen Viljatuote' light, gluten-free flour mix.
Ingredients
2 dl fine sugar
2,5 tl baking powder
2,5tspvanilla sugar
2 dl whipping cream
3 eggs
150 g curdled margarine (or melted margarine)
1 dl orange juice
2 dl frozen blackberries
Preparation
- Mix the dry ingredients together.
- Add the remaining ingredients and mix with a wooden fork until smooth.
- Pour into a greased and floured baking dish (e.g. a ring baking dish of about 2 litres).
- If you use a silicone liner, you do not need to grind it.
- Bake in the oven at 175°C for 45-55 minutes. Test for doneness with a toothpick, for example. When the dough does not stick to the stick, the cake is ready.
- Dip the gluten-free blueberry coffee cake and let it cool before cutting.
