An easy and tasty coffee cake made from Virtasalmen Viljatuote' rough, gluten-free flour mix.

Ingredients

  • 2 eggs

  • 2 dl sugar

  • 1 dl curdled margarine

  • 2 dl cream

  • 1,5 tsp baking powder or

  • 0,75tspbaking soda

  • 3,5 dl Virtasalmi's Grain Product Raw or Light Gluten-Free Flour Puree

  • 2 tsp vanillin sugar

  • Kuorrute
  • 75 g melted butter or margarine

  • 3,5 dl icing sugar

  • 3 tbsp strong coffee

  • 2 tbsp cocoa powder

  • 1 ml salt

Preparation

  • Use a wooden fork to break the texture of the eggs.
  • Add the margarine, sugar and vanilla sugar.
  • Combine the baking powder with the flour mix.
  • Add the cream alternately with the flour mix to the dough.
  • Pour the dough into a greased, floured baking pan and bake at 175°C on the lower shelf of the oven for about 40 minutes.
  • Mix the icing ingredients together and pour over the cooled cake.

  • Make a double portion of the dough and pour it onto a greased baking sheet.
  • Bake in a 200 °C oven for about 20 minutes.

  • Once the plate has cooled for a moment, divide it into portions.
  • Mix the icing ingredients and spread on a baking tray.
