minutesGluten-free Christmas cheesecake is a delicious addition to the Christmas table. The cake combines traditional cheesecake ingredients and Christmas spices.
Ingredients
1 eggs
0,5 dl sugar
0,5 dl Gluten-free maize flour from Virtasalmi Cereal Product
0,25 tsp baking powder
1 tsp gingerbread icing
- Stuffing
2,5 dl whipped cream
2prk(400 g) gingerbread-flavoured quark
150 g unflavoured cream cheese
0,5 dl brown sugar
1 dl lingonberry jam
3 tsp gelatine powder
0,5 dl water
Preparation
- Whisk the egg and sugar into a fluffy froth.
- Add the flour and gingerbread spice and gently stir with an arrow.
- Bake at 175 C for about 10 min.
- Cool the base.
- Stuffing
- Whip the cream, cream cheese, cream cheese and brown sugar.
- If using frozen arrows you will need 2 dl, thaw them, mash and add to the foam.
- Heat the gelatine powder and water until smooth, but do not boil.
- Cool the gelatine mixture and add to the filling, stirring as you go.
- Spoon the filling over the cooled base and chill in the fridge.
- A luscious gluten-free Christmas cheesecake is at its best the next day.

Glad you were interested in the recipe. Usually 1 tsp gelatin powder is equivalent to 1-2 gelatin leaves, but you should check the gelatin package as there may be brand-specific differences.
