3 dl Gluten-free dark flour mix from Virtasalmi Cereal Products
150 g dairy-free margarine
1,5 dl unflavoured soya yoghurt
1 rkl water
A pinch of salt
- Fillings
1 dl stone-ground kalamata olives
100 g mini plum tomatoes
1 green pepper
1 small red onion
200 g vegan Greek cheese
2 tl dried oregano
150 g vegan grated cheese
1 dl unflavoured soya yoghurt
black pepper

Preparation
- Fold the diced fat into the salt and flour mixture.
- Finally, add the water and yoghurt. Mix the dough until smooth. Put the dough in cling film and refrigerate it while you prepare the fillings.
- Chop the vegetables into pieces of your choice and dice the Greek cheese.
- Combine the grated cheese with the yoghurt in a bowl and season with black pepper.
- Press the dough into a greased pie dish (Ø 25 cm).
- Prick the base with a fork and bake in a 200°C oven for about 10 minutes.
- Sprinkle the chopped vegetables, cheese cubes and dried oregano over the pre-cooked base. Pour the yoghurt and cheese mixture over the top.
- Bake in the oven at medium level for about 30-35 minutes.
- Let cool and garnish with arugula shoots if you like.
