minutesDelicious gluten-free millet bread is perfect for both dinner and breakfast. Due to its mild taste, you can choose any topping you like, either savoury or sweet.
Ingredients
6 dl warm water
1,5 tsp dry yeast (or 20 g fresh yeast)
2,5 dl Gluten-free corn flour from Virtasalmi Cereal Product
2,5 dl Gluten-free millet flour from Virtasalmi's Grain Product
1 dl hazelnut powder
(1 tbsp Flaxseed from Virtasalmi Cereal Products)
1tspsalt
Preparation
- Mix the dry ingredients in a bowl with a wooden fork and add the warm water.
- Mix the dough until smooth and be careful not to overmix! Pour into a 1.5 litre loaf tin.
- Let the bread rise for half an hour.
- Bake at 225 degrees for about 45 minutes.
- Dump the baked gluten-free millet bread onto a wire rack and allow to cool.
Tip
- Is there still some bread left after a day or two of baking? Try toasting the bread in a toaster, you'll get a new crispness on the surface and bring out the mild flavours better. You can also use the bread in bruschetta, for example.
6dl of liquid seems like a lot vs 5 dl of flour. The dough drains out of the baking paper lined ring cake pan I use.

The recipe has the right amount of liquid and flour 🙂 Note that 4 tsp psyllium is also added to the dough, which binds a huge amount of liquid.
Great recipe, sometimes I change the flour a bit, but it still works.

Is it possible to make bread from millet flour alone? Due to allergies, all other cereals, potatoes and corn are out of the diet.

We haven't tried this bread with millet flour only, but in principle you can make the bread entirely with millet flour. Using millet flour alone may cause changes to the texture/texture and taste of the bread.
