Gluten-free orange mousse cake

minutesGluten-free orange upside-down cake is a delicious addition to the coffee table. The fresh oranges give the cake its juiciness and flavour.
Ingredients
- Sugared oranges
2oranges
2 dl water
2 dl sugar
- Dough
125 g butter
2 dl sugar
2 eggs
3,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
2 tl baking powder
2 tl vanilla sugar
1 orange juice
1 orange peel
Preparation
- Cut the oranges into slices. You can use the oranges with their peel. Prepare the syrup by boiling water and sugar in a saucepan. When the mixture comes to the boil, lower the heat on the stove and add the orange slices. Bring to a gentle simmer. Turn the orange slices occasionally.
- While the orange slices are sugaring, prepare the dough. Grate the zest of the orange and rub the grated zest into the sugar. Whisk together the room temperature butter and sugar. Add the eggs, one at a time. Combine the dry ingredients. Mix the dry ingredients into the dough, alternating with the orange juice.
- Remove the orange slices from the heat.
- Tighten the baking paper on the bottom of the loose baking pan. Grease the edges of the pan. Lift the orange slices to the bottom of the pan. Pour the batter into the baking dish on top of the orange slices. Bake in a 175 C oven for about 45-50 min or until the cake is done. Allow the cake to cool for a moment before turning it out.

Is the recipe for this orange upside-down cake correct, I'm afraid to try it until I check if it actually contains 2 DL of baking powder.

Thank you for noticing. The amount of baking powder should of course be 2 teaspoons and not dl. We corrected the correct measurement in our recipe. 🙂
Does this come with lemon or orange zest?

Thank you for noticing. The instructions did indeed mention lemon instead of orange. The idea is to grate the orange peel. We corrected the information in the recipe as well. 🙂
