minutesEasy egg-free and gluten-free vanilla shortbreads made with mashed potatoes and Virtasalmen Viljatuote' dark rice flour. Try this easy recipe and love it!
Ingredients
100 g butter
1 dl sugar
1 dl potato purée
1 dl Virtasalmen Viljatuote Gluten Free Dark Wholemeal Rice Flour
1,25 dl potato flour
1 tsp baking powder
3 tsp vanilla sugar
Preparation
- Cream the butter and sugar.
- Add the mashed potatoes in small batches, stirring all the time.
- Whisk the dough for a couple more minutes.
- Add the dry ingredients mixed together
- Use your hands to roll the dough into balls on a baking tray and flatten slightly.
- The dough makes about 12 large or 20 smaller loaves.
- Bake the cookies for 20-25 minutes in a 200°C oven.
- Gluten-free vanilla shortbread is at its best when slightly warm.
