Easy egg-free and gluten-free vanilla shortbreads made with mashed potatoes and Virtasalmen Viljatuote' dark rice flour. Try this easy recipe and love it!

Ingredients

Preparation

  • Cream the butter and sugar.
  • Add the mashed potatoes in small batches, stirring all the time.
  • Whisk the dough for a couple more minutes.
  • Add the dry ingredients mixed together
  • Use your hands to roll the dough into balls on a baking tray and flatten slightly.
  • The dough makes about 12 large or 20 smaller loaves.
  • Bake the cookies for 20-25 minutes in a 200°C oven.
  • Gluten-free vanilla shortbread is at its best when slightly warm.
