minutesGluten-free blueberry pie is easy and quick to prepare with Virtasalmen Viljatuote' light, gluten-free flour mix.
Ingredients
4 eggs
3 dl sugar
1 tbsp vanilla sugar
3 tsp baking powder
200 g butter (or margarine)
2 dl milk
5 dl blueberries
Preparation
- Beat the eggs and sugar until foamy.
- Mix the dry ingredients together. Melt the butter.
- Add the dry ingredients, milk and melted butter to the foam, a little at a time, alternately.
- Mix gently until a smooth dough is formed.
- Mix half of the blueberries into the dough.
- Grease a baking pan (about 23 x 33 cm) and spread the dough in the pan.
- Sprinkle the blueberries on top and bake in the middle of the oven at 200 degrees for about 30 minutes.
- Serve the gluten-free blueberry pie on its own, or if you want a real treat, serve it with vanilla ice cream for a real treat.

Good pie crust. I recommend.. all berries,apples and sometimes I top with cream + cream filling.

Thanks for the advice! Great! Next time I'll try it with three eggs, so the egg won't taste so strong in the bottom. There was enough for a round pie dish and six muffins.

Good advice! I only used 3 eggs and 2 dl cane sugar instead of 3 dl sugar. The measurements of the casserole dish were odd. I made mine in a round 28 cm baking dish.

The casserole used in the recipe is indeed rectangular instead of the traditional round one. Glad to hear that the pie turned out looking like yours 🙂 🙂
Since all I had at the cottage was ready-made strawberry jam, I left the milk out of the batter and added jam dough with a spoon.
And it was good.
By the way, I added a pinch of cinnamon to the dough.

A really good pie, fluffy and tasty.
I didn't have Virtasalmen Viljatuote's flour so I used others, 2dl rice flour, 2dl oat flour and 1dl corn flour. I had sliced apples in the freezer and they were a bit soggy when you put them in the pie. Really good recipe, the pie is juicy and soft.
