Gluten-free berry muffins

Virtasalmen Viljatuote’s gluten-free oat flour brings a soft and delicious taste to these muffins.


2 eggs
1 dl sugar
1 dl melted margarine
1 dl plain yogurt
1–2 teaspoon Virtasalmen Viljatuote’s gluten-free psyllium powder
3 dl Virtasalmen Viljatuote’s gluten-free oat flour
1 ½ teaspoon baking powder
1 teaspoon ground cardamom
2 ½ dl raspberries or other berries


Add the psyllium to the plain yogurt. Let it thicken.
Mix the dry ingredients together.
Whisk the eggs and the sugar. Add the yogurt, margarine and the dry ingredients.
Add the berries.
Place the dough in muffin cups and bake at 200°C for 15-20 minutes.
