1,75 dl sugar
150 g margarine
1 lemon zest
0.5 dl lemon juice
3 dl Gluten-Free Pizza & Street Food Mix
0.5 tsp baking powder
2 eggs
- Kuorrute
1,5 dl icing sugar

2 tbsp lemon juice
Preparation
- Mix the sugar and lemon zest in a bowl. Set aside a little lemon zest for the glaze.
- Add the softened butter and eggs to a bowl and beat vigorously.
- Add the lemon juice, flour, and baking powder to the mixture and beat until smooth.
- Pour the batter into a baking pan (approx. 20×26 cm) and bake at 180 degrees for about 15–20 minutes.
- The batter shouldn’t be like a sponge cake base—you’re aiming for something somewhere between that and a brownie! While the squares are cooling, prepare the glaze by mixing the ingredients together. Pour it over the slightly cooled lemon squares.
