Gluten-free red velvet cupcakes are perfect for a Halloween-themed dinner party. The dough makes about 12-15 cupcakes (depending on the size of the pan).

Ingredients

  • 3 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix

  • 2 dl sugar

  • 1 rkl cocoa powder

  • 1 tl vanilla sugar

  • 1tspbaking soda

  • 1 tl baking powder

  • 2 eggs

  • 1 dl milk

  • 2 tl apple cider vinegar

  • 0,5 dl rapeseed oil

  • n. 2 rkl red food colouring

  • Kuorrute
  • 150 g butter

  • 3 dl icing sugar

  • 1 tl vanilla sugar

  • 400 g cream cheese

  • 1 rkl lemon juice

Preparation

  • Grease the muffin tin or place the muffin liners in the recesses of the muffin tin. Mix together the eggs, milk, apple cider vinegar, oil and red food colouring. Combine the dry ingredients. Sift the dry ingredients into the liquids and mix the batter until smooth. Divide the batter into muffin tins and bake in a 175C oven for about 15 minutes. Allow the cupcakes to cool before frosting.
  • For the icing, whisk together the room temperature butter, icing sugar, lemon juice and vanilla sugar until fluffy. This takes about 5 minutes. Finally, stir in the cream cheese. Drizzle the icing over the cupcakes.
