minutesGluten-free spiced banana muffins using only teff flour! This recipe makes about 25 deliciously muffins.
Ingredients
150 g margarine
1,5 dl sugar
1 dl brown sugar
3 eggs
3,5dlVirtasalmen Viljatuote's gluten-free dark wholegrain teff flour
2tspbaking powder
1tspbaking soda
4 tsp gingerbread icing
2 tsp vanilla sugar
3 ripe banana
Preparation
- Mash the ripe bananas. Melt the margarine and mix well with the sugars. Add the eggs. Mix the dry ingredients together and add to the batter alternately with the bananas, mixing as little as possible.
- Divide the batter into muffin tins and bake at 175 degrees for about 20 minutes. The muffins will be quite dark because of the teff flour and bananas, don't be alarmed!
- Store the gluten-free spicy banana muffins in an airtight container.
