Gluten-free and vegan blueberry and cardamom pancakes make every morning better than the next! This recipe makes about 20 small American pancakes.

Ingredients

  • 2,5 dl Virtasalmi's Grain-based Gluten-Free Pancake Mix

  • 4 tbsp coconut sugar or regular sugar

  • 2 tbsp melted virgin coconut oil or rapeseed oil

  • 0,5 tsp ground cardamom

  • 0,5tspbaking powder

  • 0,25 tsp salt

  • 2dlgluten-free oat drink or soya drink

  • 1 dl gluten-free oatmeal or soya yoghurt

  • 1 dl mineral water

  • ~1 dl blueberries (frozen blueberries are fine)

  • To serve: maple syrup and berries

Preparation

  • Mix the dough well and let it rise for about 10 minutes. Bake about 1 ½ tbsp per pancake on both sides until the pancake is browned and cooked.
