Gluten-free Pike Buns

Ingredients
n. 700-900 g pike or other fish, minced
2 eggs
1 dl cream
0,75 dl Virtasalmi's Gluten Free Buckwheat Flakes / Oat Flakes
1,5-2tspsalt
white pepper
1,5-2 tbsp lemon juice
1-2 tbsp dried chives
- Castike
50 g melted butter
1tspVirtasalmen Viljatuote's gluten-free all-purpose flour mix
1 yolk
1 dl cream
3 tbsp lemon juice
a pinch of salt
1 tbsp dried chives
Preparation
- Mix all the ingredients and let the dough rise in the fridge for at least 15 minutes, if you can wait an hour the taste will be even better.
- With moistened hands, roll the dough into rounds and fry in butter or a butter-olive oil mixture over moderate heat until cooked.
- Castike
- Melt the butter in a saucepan, but it must not get too hot.
- Add the flour and cream, stir and add the lemon juice and egg yolk.
- Heat the mixture over low heat, stirring constantly, until the sauce thickens.
- Do not boil the sauce or it will curdle!
- Season the sauce with salt and chives and serve immediately.
