Gluten-free sorghum churros

Gluten-free sorghum churros are like any other churros, but oh-so-sweet! The sorghum flour mix gives the churros a wheat-like taste and texture.
Ingredients
- Dough
3 dl water
1 tbsp lemon juice
1 tbsp grated lemon rind
a pinch of salt
2 tbsp sugar or honey
100 g butter or margarine
3 dl sorghum flour mix
2 eggs
- Bakery
1 l rapeseed oil
- Surface of
1-2 dl cinnamon sugar
Preparation
- In a saucepan, mix and bring to the boil the water, lemon juice and grated zest, salt, sugar and fat. Remove the pan from the heat and add the flour mix, whisking vigorously. Beat the eggs into the slightly cooled mixture and let the dough rest for about 3 minutes.
- Spoon the dough into a piping bag with a 10-12 mm nozzle. You can also use a plastic bag with a 1 cm hole cut in the corner. Heat the oil (approx. 185 °C) in a large, thick-bottomed saucepan for immersion.
- Punch down the dough about 5-10 cm at a time, cutting it with scissors if necessary. Avoid touching the hot oil with the piping bag and be careful of oil splashes. Turn and fry until light brown.
- Use a slotted spoon to lift the churros onto a plate and place the cinnamon in another dish immediately after frying.
- Serve the gluten-free sorghum churros warm as such or dipped in melted chocolate.
Hello! How do these keep? I made the dough yesterday (today 22.3), baked today and these will be served on Friday. So do I put them in the freezer or will they keep in the fridge?
I would have asked the same question. A lot of them are good when they're fresh.

Churros are at their best when fresh. If you want to prepare them in advance, we recommend freezing them after frying before rolling them in sugar 😊
Hi, on the side of your Gluten Free Sorghum Flour Mix package the instructions for the churros don't mention eggs at all although the instructions above do mention eggs, is there a mistake or are there no eggs needed at all? I thought I would try it, but now I noticed when I was browsing the instructions.

The first packages of Durra flour mix had instructions for vegan churros 😊 The new Durra flour mixes in the bags have these "regular" instructions.
What I did was to whisk 2 eggs separately and add them to the cooled dough as in the original churro recipe. Otherwise, I followed the instructions on the package. I added 3 tsp baking powder. Also cardamom, vanilla extract although not mentioned in the instructions but gives a good flavour boost.
