Gluten Free Herb Feta Pie

minutesThe Virtasalmen Viljatuote's nettle flour mix is a joy in pancake baking, and also works well in the base of savoury pies. This delicious gluten-free herb feta pie is ready in half an hour, for example for an evening snack.
Ingredients
- Bottom
2 dl Virtasalmi Cereal Product Gluten Free Nettle Flour Puree
80 g butter or vegan margarine
50 g plain or vegan grated cheese
0,25 tsp salt
0,25 tsp sugar
n. 1 tbsp water
- Stuffing
100 g plain or vegan unflavoured cream cheese
1 tsp dijon mustard
0,5 tsp dried basil
0,5 tsp dried oregano
100 g tomatoes
100 g regular or vegan feta (I recommend using a vegan version with cubes of feta cheese)
- For serving:
lots of fresh herbs e.g. basil
Preparation
- Preheat the oven to 200°C.
- Mix the ingredients for the base: flour, butter, grated cheese, salt and sugar. Add 1 tbsp of water and continue to add water 1 tsp at a time until the dough is easily formable.
- Pat or roll out the dough onto a baking sheet on a baking sheet. Add a little water to the dough if it sticks to the roll. Do not roll out the bottom of the dough to the size of the baking sheet to avoid it being too thin.
- Stir the dijon mustard and dried herbs into the cream cheese. Spread the herbed cream cheese over the base. Slice the tomatoes thinly and place them on top of the cream cheese. Sprinkle the cheese cubes and black pepper on top. You can fold the edges of the base slightly over the pie.
- Bake in the oven for 20 minutes and allow to cool before serving.
- Serve gluten-free herb feta pie with fresh herbs.
