Easy, delicious and spectacular gluten-free chocolate cake for all summer celebrations!

Ingredients

  • 195 g / approx. 3 dl Cereal product dark gluten-free flour mix

  • 100 g dark chocolate

  • 60 g / approx. 1½ dl almond flour

  • 140 g / just under 2 dl sugar

  • 1,5 tsp baking powder

  • 0,5tspbaking soda

  • 1 tl vanilla sugar

  • 0,5 tl salt

  • 1 dl melted neutral-flavoured coconut oil or other neutral oil

  • 3,5 dl gluten-free oat drink

  • To moisten the cake, add approx. 4 tbsp gluten-free oat drink

  • For decoration:
  • 2,5 dl gluten-free oatmeal and 1 tsp vanilla sugar

  • 500 g fresh strawberries

Preparation

  • Preheat the oven to 180 degrees. Line the bottom and sides of a loose baking pan (about 18 cm) with baking paper. Melt the chocolate in a water bath. Mix the dry ingredients together, then melt the chocolate, oil and oatmeal into the mixture. Pour the batter into the baking tin and bake the cake in the oven for about 35-40 min or until a cake tester comes out clean.
  • Let the cake cool well to make it easier to cut. Whip the gluten-free oat butter into a stiff froth and slice half of the strawberries. Cut the cake in half and moisten the bases with the oatmeal. Spread half of the foam over the base, add the sliced strawberries. Decorate the second layer with the remaining foam and strawberries.
  • The gluten-free chocolate layer cake is ready to serve.
