This Christmas gluten-free gingerbread mud cake is made for winter days! The wonderfully familiar and beloved mud cake gets a gingerbread flavour in this recipe.

Ingredients

  • 200 g butter

  • 200 g dark gluten-free chocolate

  • 4 eggs

  • 2 dl Indian sugar / plain sugar

  • 1 tl vanilla sugar

  • 2 dl Virtasalmen Viljatuote's gluten-free dark flour mix

  • 1 tl baking powder

  • 0,5 tl salt

  • 1 rkl gingerbread icing

  • OR
  • 1 tl cinnamon

  • 0,5 tl cardamom

  • 0,5 tl ground cloves

  • 0,5 tl ground ginger

  • 0,5 tl ground pomeranian

Preparation

  • Melt the butter and chocolate over low heat and allow to cool. Beat the eggs and sugar until fluffy. Mix together the dark flour mix, vanilla sugar, baking powder, salt and gingerbread spice/flavourings and add to the egg sugar foam, turning gently. Add the cooled chocolate butter.
  • Stretch a 24 cm loose-bottomed baking dish and grease (and bread the edges of the dish).
  • Bake in a 24 cm loaf pan at 200 C for 15-20 min. The cake should remain loose in the middle.
  • Chill and serve the gluten-free gingerbread with vanilla ice cream.
