These gluten-free gingerbread cups with gingerbread mousse are the perfect dessert for both Christmas parties and the Christmas table! The mouthful-sized treats are the perfect combination of gingerbread and delicious mousse.

Ingredients

  • Prepare the gingerbread dough according to these instructions.

  • Gingerbread mousse
  • 2 dl whipped cream

  • 0,5 dl sugar

  • 200 g vanilla cream cheese

  • 0,5dlgingerbread crumbs

  • 0,5 tl gingerbread spice (taste and taste!)

Preparation

  • Set the oven to 200 degrees Celsius. Using a traditional gingerbread mould, press out thin biscuits. Lightly grease a muffin tin and place the biscuiyts on the bottom. Gently press the dough in the middle first to thin it out. Then press the folds into the shape of a muffin tin. This will prevent the base from rising too much and give the cup a nice edge.
  • Bake the cookies at 200 degrees for about 5 minutes. Allow to cool and prepare the mousse. Start by crushing the gingerbreads. Crush them small enough so that the mousse is smooth.
  • Whip the cream and sugar until fluffy. Add the vanilla cream cheese and gingerbread spice mix. Mix until smooth. Finally, stir in the gingerbread crumbs. Transfer to a piping bag and pour over cooled cups. Serve the gluten-free gingerbread cups with gingerbread mousse!
