4 eggs
1,5 dl sugar
1,5 dl Virtasalmen Viljatuote's gluten-free all-purpose flour mix
2 tsp baking powder
- Stuffing
100-200 g jam
2 dl whipping cream
200 g vanilla cream (or cream cheese)
fresh berries to taste
Preparation
- Whisk the sugar and eggs. Mix the dry ingredients together and add to the foam, stirring as little as possible. Scrape the dough into a deep baking pan lined with baking paper and flatten. Bake at 225°C for 7-10 minutes.
- Allow to cool for a moment after removing from the oven and roll up while still warm. Whip the oat cream and add the curd or cream cheese and jam. Spread evenly over the base and add the berries. Roll the cake into a fairly tight roll. Remove the bottom from the baking paper as you roll the bottom onto the roll. This will keep the base together and make it easier to move as one piece. Leave the gluten-free roll wrapped in the baking paper for a while to rest. If you made the roll in advance, this is also a good way to store it in the fridge.
- Sprinkle sugar over the cake before serving, top with whipped cream or decorate as you wish!
