Ingredients
100 g avocado (weighed without skin and stone)
0,5 dl rapeseed oil
1,25 dl soy drink or milk
1 dl sugar
1 tl vanilla sugar
1 tsp baking powder
a pinch of salt
- Stuffing
250gquark
2 eggs
1 dl milk
1 tl vanilla sugar
0,75 dl sugar
0,25 dl lemon juice
lingonberries
Preparation
- I blended the chopped avocados in a hand blender with the oil and soy drink.
- Then just mix in all the dry ingredients and place the dough in a 26 cm pie pan.
- I pre-baked the base for ten minutes in a 175 degree oven
- Stuffing
- In the meantime, I mixed the filling ingredients, except for the lingonberries.
- On the pre-fried base, first a dollop of cream filling and a handful of lingonberries on top for decoration.
- And then into the oven for about 40 minutes.
- The bottom was nicely browned underneath and cooked well anyway. However, it is quite dense, probably due to the avocado. But the gluten-free avocado and beetroot pie tasted good, just right and not too sweet.
