Banana and coconut go wonderfully together. The muffins are easy to make with Virtasalmen Viljatuote' gluten-free buckwheat and millet flours.

100 g margarine
1 dl water
2 large egg
1 dl sugar
1 dl Gluten-free buckwheat flour or Finnish buckwheat flourfrom Virtasalmi Cereal Products
1 dl Gluten-free millet flour from Virtasalmi's Grain Product
0,75 dl coconut flakes
2 tsp cinnamon
1tspcardamom
1 tsp baking powder
1 banana mashed with a fork
Preparation
- Add the water and fat to a saucepan and heat until the margarine melts.
- Allow to cool. Whisk the eggs and sugar.
- Combine the remaining dry ingredients. Add the flour and fat mixtures and the banana sorbet to the dough. Mix well.
- Pour the batter into muffin tins and bake in a 200°C oven for 15-18 minutes.
- The muffins can be served both warm and chilled.
