Gluten-free Kinder cupcakes are a double delicious treat! The milk chocolate muffins are iced with delicious white chocolate icing. If you prefer to omit the icing, add more white chocolate chips to the batter.

Ingredients

  • muffins
  • 150 g margarine

  • 2 dl sugar

  • 2 eggs

  • 0,5 dl water

  • 3 dl Viljatuote Dark Gluten Free Flour Mix

  • 3 tbsp cocoa powder

  • 2 tsp vanilla sugar

  • 2tspbaking powder

  • a few rows of white chocolate (and milk chocolate if you like)

  • Kuorrute
  • 200 g cream cheese

  • 100 g margarine

  • 150 g white chocolate

  • 2tspvanilla extract

  • 6 dl icing sugar

Preparation

  • Whisk together the room temperature margarine and sugar. Add the eggs and water. Combine the dry ingredients and add to the dough. Add the chocolate chips and stir to combine. Pour into muffin tins (about 9 large ones). Bake at 200°C for about 15 minutes.
  • Mix the cold margarine with about 2 dl of caster sugar in a food processor or with an electric mixer. Add the cream cheese, melted white chocolate and vanilla extract. Mix until smooth. Add the icing sugar 1-2 dl at a time. Transfer to a piping bag and frost the cooled muffins. Sprinkle with Kinder egg pieces or white and milk chocolate crumbs/granules.
  • Store the gluten-free kinder cupcakes in the fridge and allow to warm up before serving to soften the cupcake slightly.
