A quick, easy and good cake that will put you in the mood for a day of celebration. It's worth a try if you're short on time but still want something good for guests - or just your own party.

Ingredients

  • 100 g raw chocolate

  • 100 g margarine

  • 1 dl sugar

  • riposte salt

  • 0,5tspbaking soda

  • 1 dl Viljatuote Gluten Free Sorghum Flour Mix

  • 2 pcs eggs

  • Filling and decoration
  • splash coffee or milk to moisten the cake

  • 2 dl whipped cream

  • 0,5 dl sugar

  • 1 tsp raw cocoa powder

  • 1 pcs banana

  • n. 10 pcs fresh strawberries

Preparation

  • Chop the raw chocolate and margarine into a bowl. Melt in the microwave for about 30 seconds at a time, stirring occasionally, until smooth.
  • Add the sugar, salt, baking soda and sorghum flour mixture. Stir.
  • Finally, add the eggs, one by one, mixing quickly to form a smooth dough.
  • Pour the dough into a small loaf pan (or similar small cake pan). Bake at 200°C for about 8-10 minutes.
  • Allow to cool completely before filling. Cut the cooled cake base in half down the middle.
  • Fill and decorate
  • Moisten the cake layers with coffee or milk. Whip the cream, add sugar and cocoa powder. Slice the banana. 
  • Spread half of the whipped cream on the base, add the banana slices. Lift the second base, spread the rest of the whipped cream and garnish with strawberries.
