Simple gluten-free sourdough from Virtasalmen Viljatuote' gluten-free dark teff flour. Try it and love it.

Preparation

  • First mix the ingredients for the first day and then add the ingredients to the dough each day according to the instructions.
  • On the evening of the fourth day, the root is ready and can now be made into bread dough.
  • If you bake within a week, the dough will just keep in the fridge in a lidded jar for that time.
  • The way to wake up gluten-free sourdough is to take a glass jar from the fridge in the morning, add some lukewarm water and flour and stir throughout the day. In the evening you can bake with the root.
  • You can also freeze the root by taking 1-2 dl of the dough, for example in a freezer box for the next baking session.

  1. How do you know if it has just gone too acidic/dead/spoiled?
    teff flour is different so the "gases" produced by the bacteria smell different than gluten-containing grains.

    Is there anywhere here in Kuopio where I can get that teff flour? Where is that flour made from? Next week I would like to try gluten-free baking.

    1. Hi Seija!

      dark wholegrain teff flour is part of the S Group, so you might be able to find it at Prisma. The Customs room in the shopping mall also sells our products, but I don't remember if they have this in their range.
