hourEasy gluten-free chia lemon cake is the perfect treat with coffee! The fresh cake is finished with an even fresher icing!
Ingredients
1,75 dl sugar
0,5 tsp baking powder
3 eggs
125 g milk cream (half a packet)
pinch of salt
n. 65 g butter/margarine
1 lemon peel
0,5 lemon juice
1 tbsp chia seeds
- Frosting
0,5 lemon juice (approx. 20ml)
n. 40 g butter/margarine
2 dl icing sugar
0,5tspvanilla sugar
Preparation
- Preheat the oven to 180 degrees.
- Melt the butter and allow to cool. In a bowl, mix the flour mix, sugar and baking powder. Add a pinch of salt and the eggs. Mix well. Grate the lemon zest. Add the curd, butter, lemon zest, juice of half a lemon and chia seeds to the dough. Mix well.
- Pour the batter into a baking pan lined with baking paper (1-1½ litres, the 1½ litre pan used for the cake in the photo). Bake in the oven for about an hour. Test the cake for doneness with a cake tester. Allow the cake to cool before removing from the pan.
- Frosting
- Melt the margarine and mix the ingredients together. Melt the mixture in the microwave for a moment and mix until smooth. Pour over cooled cake while warm. You can prepare the icing while you are making the dough.
