Easy gluten-free chia lemon cake is the perfect treat with coffee! The fresh cake is finished with an even fresher icing!

Ingredients

  • 2,5 dl Virtasalmen Viljatuote's gluten-free bun flour mix

  • 1,75 dl sugar

  • 0,5 tsp baking powder

  • 3 eggs

  • 125 g milk cream (half a packet)

  • pinch of salt

  • n. 65 g butter/margarine

  • 1 lemon peel

  • 0,5 lemon juice

  • 1 tbsp chia seeds

  • Frosting
  • 0,5 lemon juice (approx. 20ml)

  • n. 40 g butter/margarine

  • 2 dl icing sugar

  • 0,5tspvanilla sugar

Preparation

  • Preheat the oven to 180 degrees.
  • Melt the butter and allow to cool. In a bowl, mix the flour mix, sugar and baking powder. Add a pinch of salt and the eggs. Mix well. Grate the lemon zest. Add the curd, butter, lemon zest, juice of half a lemon and chia seeds to the dough. Mix well.
  • Pour the batter into a baking pan lined with baking paper (1-1½ litres, the 1½ litre pan used for the cake in the photo). Bake in the oven for about an hour. Test the cake for doneness with a cake tester. Allow the cake to cool before removing from the pan.
  • Frosting
  • Melt the margarine and mix the ingredients together. Melt the mixture in the microwave for a moment and mix until smooth. Pour over cooled cake while warm. You can prepare the icing while you are making the dough.
  • Gluten-free chia lemon cake is ready to enjoy!
