Wind hats sound difficult to many ears, but in reality they are not as difficult as people often think. If you follow the recipe calmly, step by step, and have the patience to bake properly - which means never opening the oven halfway through - it's surprisingly easy to succeed. The dough comes together quickly, and the rolling out is actually quite fun!

  • Mix the flour, baking powder and salt together.
  • Bring the water and butter to the boil in a saucepan.
  • Add the flour mixture all at once and stir vigorously until the dough comes away from the sides of the pan.
  • Let the dough cool for a moment. Add the eggs one by one, mixing well after each addition.
  • Transfer the dough to a piping bag and shape the baking paper into the shapes you want. You can make small mouthfuls or larger round rosettes. Leave some space between the extrusions, as they will expand in the oven.
  • Bake at 200 °C for 25 minutes, until risen and golden brown. Do not open the oven during baking.
  • Allow the windbreakers to cool completely before filling.

  • Measure all the ingredients into a bowl.
  • Beat with an electric whisk until fluffy.
  • Transfer the foam into a piping bag.
  • Use a knife to cut a small hole in the cap and fill it with the cream cheese filling.
