120 g butter/margarine
180 g (2 dl) sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla sugar
1 teaspoon baking powder
½ teaspoon xanthan gum
200 g (3 dl) Virtasalmen Viljatuote’s gluten-free bun flour mix
150 g (2 dl) Virtasalmen Viljatuote’s gluten-free fine rice flour
Whisk butter and sugar to obtain a nice foam.
Add the eggs one by one.
Mix all dry ingredients and add the mix to the dough whisking carefully.
Place the dough in a piping bag with a star tip. Pipe the biscuits in ”S” shape keeping space between each biscuits.
Bake at 200°C for about 10 minutes or until they are golden. If they are not crunchy enough, bake a bit longer to your own taste. Cooking time depends on oven efficiency and size of the biscuits.
