Easy and quick blueberry cake made with Virtasalmen Viljatuote’s gluten-free all-purpose flour mix.
3 dl sugar
5 dl Virtasalmen Viljatuote’s gluten-free all-purpose flour mix
1 tablespoon vanilla sugar
3 tablespoons baking powder
200 g butter (or margarine)
2 dl milk
5 dl blueberries
Whisk eggs and sugar to get a nice foam.
Mix the dry ingredients together. Melt the butter.
Add to the foam the dry ingredients, the milk and the melted butter alternately.
Mix lightly into a smooth dough.
Mix half of the blueberry to the dough.
Butter a cake mould (about 23 x 33 cm) and spread the dough.
Sprinkle the remaining blueberries on the top and bake at the middle of the oven for about 30 minutes at 200°C.
Serve the cake with vanilla sauce or vanilla ice cream.
