Gluten-free vegan strawberry sheet cake

A gluten-free vegan strawberry sheet cake is easy to bake even at a cottage! It's the perfect treat for strawberry season!

Gluten-free vegan strawberry sheet cake

Ingredients
Cake
 150 g strawberries
 2 dl sugar
 2 tsp baking powder
 1 tsp vanilla sugar
 ½ tsp salt
 200 ml gluten-free plant-base milk
 100 ml gluten-free plant-base yogurt
 100 ml canola oil
Cake toppings
 100 g strawberries
 200 ml gluten-free oat for whipping (this measurement is taken before whipping)
 2 tbsp sugar
 200 g strawberries
Directions

Preheat oven to 200 C. Line a large baking sheet with parchment paper. Chop strawberries. Mix dry ingredients: flours, sugar, baking powder, salt. Combine wet ingredients to dry and fold in chopped strawberries. Pour cake batter on the baking sheet and spread until it's a large cake almost the size of the sheet (about 3/4 the size). Bake for 20-25 minutes or until toothpick test comes out clean. If you make a bigger cake (which is also thinner) check the cake earlier, already after 10-15 minutes. Let the cake cool.

Blend strawberries until you get a strawberry puree.
Whip oat for whipping until fluffy. Mix whipped cream, sugar, and strawberry puree to make strawberry cream. Spread the cream on top of the cake and decorate with more strawberries.
