Gluten-free vegan "meat" pie is an easy and delicious snack, lunch or dinner!

Gluten-free vegan ”meat” pie

Ingredients
Dairy-free quark & butter puff pastry
 3 ½ dl Virtasalmen Viljatuote's Gluten-free All-purpose Flour Mix
 1 tsp baking powder
 ½ tsp salt
 250 g dairy-free butter
 250 g dairy-free unsweetened quark
Vegan "meat" filling
 1 dl Virtasalmen Viljatuote's porridge rice
 1 onion
 2 cloves of garlic
 250 g Vegan minced "meat"
 1 tsp ground cumin
 1 tsp paprika powder
 2 tsp dried herbs such as thyme and oregano
 ½ tsp salt
 ½ tsp black pepper
 50 ml to 100 ml veggie broth (depending on the rice used)
Directions

Mix dry ingredients. Add butter and pulse with a food processor or combine it with hands. Add quark and mix gently. Refrigerate for 30 min. Cook millet or porridge rice. Cook vegan "meat", onions and garlic. Add spices, cooked millet, and veggie broth.
Roll dough on a well-floured surface until it's the size of a baking sheet. Add filling on one half and fold the other half on top. Press the edges tightly and poke a few times with a fork. Bake 200 C for 25 minutes. Enjoy warm with a colorful salad!

Tip: you can brush the pie with gluten-free oat milk or a mixture of quark and milk before baking
