Gluten-free vegan berry tart

This gluten-free vegan berry tart is perfect to empty that freezer! Just use the berries that you have and mix them up!

Gluten-free vegan berry tart

Ingredients
Tart crust
 ½ dl sugar
 2 tsp vanilla sugar
 ½ tsp ground cardamom
 100 g coconut oil
 1 tsp to 1 tbsp water
Dairy-free quark filling
 3 dl dairyfree ”quark” such as Alpro go / Greek style
 1 dl sugar
 1 tsp vanilla sugar
 6 dl mixed frozen berries such as blueberries, raspberries and strawberries
Directions

Preheat oven to 200 C and grease the tart pan.
Mix dry ingredients and combine with coconut oil. Add water 1 tsp at a time to make the batter firm and not crumbly.
Press batter on the bottom of the tart pan and bake for 10 minutes.
Mix “quark”, sugar and vanilla sugar and spread it evenly on top of the prebaked crust. Add berries on top.
Bake for 25 minutes and let cool well.

Note: Store tart well covered in the fridge. Take the tart out 30 minutes before serving so the coconut oil crust will be softer.
